Cooking with Rufus: Brown Sugar Mascarpone Tartlets


Okay, so this is a fairly simple recipe, which is good for those of us who are somewhat lazy and absent-minded. Claire and I made these for our anniversary, which was this weekend.

Ingredients:

One 225 g package frozen mini tart shells.

1/4 cup packed brown sugar

1 1/3 cups mascarpone cheese

1 cup fresh strawberries, raspberries, or blueberries

1. Remove tart shells from freezer and place on baking sheet. Bake in 400 degree oven (F) for about 10 to 12 minutes, or until golden brown. Let cool completely.

2. Press brown sugar through a fine wire mesh sieve into bowl. Add mascarpone cheese and using wooden spoon, stir to combine well. I've found that the mesh business isn't really necessary, though. Just mix the brown sugar and the mascarpone and you should be fine.

3. Using a piping bag, or in our case a zip lock bag with a corner cut off, pipe the mixture into the shells, top with berries, and chill in refrigerator.

Makes 18 tarts.
